Cupcakes are a total stretch for a Thanksgiving dessert. I realize this. But a coworker brought these in the other day, and several people demanded I get the recipe and share it with you. Apparently, they were delicious. Unfortunately, it was my day off so I didn’t get one. I will take their word for it on the deliciousness, though. Plus this is a brownie with red velvet cake on top. And that is just a damn good idea.

Easy Red Velvet Brownie Cupcakes

One box Red Velvet cake mix

One box brownie mix

1 8 oz package cream cheese, softened

2-3 cups powdered sugar (depending on desired sweetness)

Milk

Cupcakes

Prepare the red velvet mix in one bowl and the brownie mix in another. Line cupcake tins with cupcake paper cups. Fill lined cupcake tin with one third brownie mix. Pour red velvet mix on top.

Let bake for about 15-20 minutes acocrding to package directions. Allow to cool before frosting.

Frosting

In large mixing bowl place softened cream cheese, powdered sugar and about ¼ teaspoon of milk. Mix well until all cream cheese lumps are gone.

If frosting is too thick, add in ¼ teaspoon of milk at a time and stir after each addition. It doesn’t take much liquid to thin out. If you add too much milk, you’ll have to add more powdered sugar to thicken it back, which will make it sweeter.
