So, you’re going to take the family camping this summer and your big question is how to prepare meals for your family in the middle of the wilderness? Don’t sweat it — we’ve got a short list of some simple meal ideas. Of course, we all know there will be a night of roasting hotdogs and making s’mores over the campfire; it’s almost a rite of passage for campers. Here are a few more selections that your family will love — and you’ll love how easy they are to make and clean up!

Breakfast:

Blueberry muffins, scrambled eggs & lil’ smokies. It doesn’t get any easier than this for a morning meal to get the troop ready for a day of adventure. Simply make your muffins ahead of time and bring your favorite cast iron skillet to cook up some eggs and lil’ smokies for a protien-packed breakfast the family will love!

Lunch:

Campfire chicken quesadillas. Sandwiches are great but here’s a fun campfire spin! All you need is some foil, tortilla shells, pre-cooked shredded chicken (a whole roasted chicken works great), shredded cheese, black beans, onions, diced tomato, sour cream, guacamole and hot sauce. Kids will enjoy making their own quesadilla and wrapping it in foil for the campfire. Simply set the foil packet on the grate over the fire and cook for about one minute on each side. An easy, healthy lunch option.

Dinner:

Campfire skewers & potatoes. This is a healthy, no-fuss dinner and one you can prepare just before your trip to make life easier. Simply pre-thread some metal skewers with the meat and veggies of your choice, slather them in bbq sauce or simply season them with oil, salt and pepper, then wrap them in foil. When it comes time to cook, stick them on the campfire grate to cook for 10-15 minutes or until done. Finely slice or dice up some washed potatoes and season with olive oil, salt, pepper and rosemary and seal up in a foil pouch to cook over the campfire for 15-20 minutes until done.
