It’s one of my life philosophies to keep a box of cake mix on hand at all times. You never know when you may need it. And not just for cakes — you can transform those into cookies, too. Take any flavor cake mix, add standard ingredients, then sexy it up with whatever you like. There are some really cute Funfetti mixes out now with bright Easter-colored flakes in them, or St. Paddy’s day-inspired mixes. So you get holiday cookies without a lot of fuss.
Betty Crocker’s standard recipe for cake-mix cookeis is as follows:
Cake Mix Cookies
1 cake mix
1/2 cup butter
2 tablespoons vegetable oil
1 teaspoon vanilla extract
Cream butter. Add oil, vanilla & eggs and beat together. Stir in cake mix. If you want chocolate chip cookies, use a yellow cake mix and add in 1 c. choclate chips. You can make chocolate cookies using chocolate cake mix, make lemon cookies using lemon cake mix, etc.
You can mix it a cup or so of nuts, candy pieces, chips, etc., to add to your cookies. Or try rolling them around a chocolate piece, like a rolo or M&M, for a hidden surprise.
Bake at 350 degrees for 8-10 minutes, and let cool for 5 minutes before removing.
