Yesterday I was chatting with a coworker, Lisa, about food and she mentioned she was making her “famous chicken pizza” for dinner. Well, being a pizza fan, I had to know the details. And they were so amazing, I just had to pass them on to you.

This is a fantastic idea. It satisfies your pizza cravings, is low-carb and pretty low calorie, too. So diet friendly and delicious? Fabulous. And making pizza at home is always a winner, because you can offer up a variety of toppings to the kids and have them build their own. This is great on so many levels: Gluten free, low carb, fresh veggies, protein. You can probably get it done in 30 minutes or less and please the whole family.

Lisa’s Chicken Pizza

One chicken breast per person

Jar of pizza sauce

Green peppers, mushrooms, onions (toppings of your choice)

Mozarella Cheese

Use a mallet to pound your chicken breast so it’s kind of flat. Using a little bit of oil, cook it in a pan until cooked through (all white, no signs of pink). In a separate pan, saute some veggies for your pizza, such as peppers, onions and mushrooms.

Now, there are two ways to go: You can leave your chicken in the pan, spread some sauce over the top of it, add your ingredients and top it with cheese, then put the lid on the pan and let it sit until the cheese has melted, or: Remove your chicken from the pan and place on a broiler pan. Add sauce, ingredients and cheese. Place under broiler for 2 to 3 minutes until cheese has melted.
